Golden Cloud Choc Chip & Peanut Butter Cookies & Beacon Hot Chocolate

Tis the season for decadent hot chocolate and delicious Christmas treats by the fire

Serves: 12-18

Ingredients:

Chocolate chip cookies:
1 ½ cup Golden Cloud cake flour
1 tsp baking soda
½ cup butter, room temp
½ cup brown sugar
6 tbsp white sugar
1 egg
1 tsp vanilla essence
Pinch of salt
80g Beacon Milk Chocolate Slab, chopped into chips

Peanut butter cookies:
½ cup butter, softened
1 tsp vanilla essence
½ cup brown sugar
½ cup white sugar
1 egg
¼ cup peanut butter
1 ½ cup Golden Cloud Cake flour
1 tsp baking powder
Pinch of salt
80g Beacon Heavenly Peanut Butter Brittle

Hot chocolate:
2 cups milk
3 tbsp white sugar
2 tbsp cocoa powder, and a bit to dust
1 tsp vanilla essence
½ cream, whipped
80g Beacon Heavenly Milk Chocolate Slab

Method:

Preheat the oven to 180C and prepare two baking sheets.

For the choc chip biscuits:
Sift the dry ingredients together in a large bowl. In another large bowl, use an electric mixer and beat together the butter and sugars until smooth. Add the egg and vanilla and whisk to combine. Gradually add the flour mixture and mix until just incorporated. Add the chocolate and stir with a wooden spoon. Using an ice cream scoop, drop the better onto the baking sheets. Bake the cookies for 10-12 minutes or until the edges are lightly browned and tops feel firm when touched. Let the cookies cool then enjoy!

For the peanut butter cookies:
Place the butter and vanilla in a large mixing bowl and beat with an electric whisk until lightly and fluffy. While beating, gradually add in the sugar and beat until well combined. Add the egg and peanut butter and beat until combined. Add the flour, baking powder and salt. Fold in the Beacon Heavenly c. Roll the dough into medium-small dough balls and place them on the baking sheet. Dip a fork in granulated sugar and flatten the balls. Bake for 10-12 minutes until lightly browned.

For the hot chocolate:
Add the milk, sugar and cocoa powder to a saucepan. Heat over medium heat and bring to a gentle simmer, whisking occasionally. Remove from the heat and add the vanilla. Break two cubes of chocolate into two cups. Pour the milk mixture into the cups. Top with the whipped cream, dust cocoa powder and enjoy!
