Golden Cloud Christmas Sticky Date Pudding

To give you much needed inspiration, a classic sticky date pudding is the best way to satisfy  your festive feeling.

250g dried dates
1 ½ cups boiling water
1 tsp bicarb
90g butter, softened
1 ¼ cup brown sugar
3 eggs
1 ½ cup Golden Cloud self-rising flour
1/3 cup walnuts
1/3 pecans
80g Beacon Heavenly Midnight velvet chocolate

1 cup brown sugar
300ml cream
100g butter, cut into blocks


Preheat the oven to 180C and prepare a 22cm round cake pan.
In a bowl, combine the date, water and bicarb. Stir and allow to stand for 5 minutes.
Place the mixture in a blender with the butter and sugar and process until smooth.
Transfer the mixture into a bowl, whisk in the eggs, followed by the flour until just combined.
Spread the mixture into a pan and sprinkle evenly with nuts and chocolate
Bake the pudding for 1 hour or until a skewer inserted into the centre comes out clean. Cool completely.
For the salted caramel sauce; stir ingredients in a medium saucepan over low heat, without boiling, until sugar dissolves. Simmer, stirring for 3 minutes. Remove from heat, stir in salt
Drizzle the sauce on top of hot pudding, leave some for serving.
