Clover Classic Custard Éclair Cake
Éclairs are a delicious creamy and chocolate dessert that you can enjoy in the comfort of your home.

Ingredients:
For the eclairs
1 cup flour
A pinch of salt
1 cup water
4 tbsp butter
2 eggs
Large round tip Nozzle
For the filling
2 cups Clover classic custard
1 cup cream whipped
A handful strawberries finely chopped
1 cup chocolate melted
Fresh berries for garnishing
Method:
Place the water in a pot and bring to a gentle simmer add in the butter and allow to melt. Add in the flour and salt, use a wooden spoon and mix until combined remain storing until the dough pulls away form the side of the pot. Remove from the heat, place in a large bowl covered with cling wrap, allowing it to cool for a few minutes. Using a stand or hand mixture and in the eggs 1 at a time until a smooth batter is formed. Place into a piping bag with a fitted nozzle and pip onto a baking sheet lined with baking paper. Make sure to leave enough shape between each eclair. Wet your hand with water and sprinkle over the baking sheet. This will turn to steam once in the oven aiding the rasing of your eclairs. Bake for 10 minutes at 190°C and 15-20 minutes at 170°C. Once done baking allow to cool a a wire wrack .
For the filling, fold through the Clover classic custard and whipped cream until well incorporated add in the strawberries and place in a pipping bag. Pipe the filling at the base of the cooled eclairs. Drizzle or dip the eclairs with the melted chocolate and pile them on a serving dish to for somewhat of a cake shape garnish with fresh berries.
