Golden Cloud Condensed Milk Chai & Naan Khatai

Delicious dish that you are certain to find an authentic Indian sweet or savoury eggless cookie known as Naan Khatai.

Ingredients:

Condensed milk chai:
4 teabags
500-600ml boiling water
1 can condensed milk
Sugar to taste (Optional)

Naan Khatai:
250ml Ghee or Butter, room temperature
250ml castor sugar
½ tsp nutmeg powder
½ tsp cardamom powder
Pinch of salt
½ tsp bicarbonate of soda
2 tsp baking powder
60ml Golden Cloud Semolina
625ml Golden Cloud Flour
Whole almonds

Method:

For condensed milk chai:
In a heavy based pot, add water, tea leaves (or bags). Boil on high heat for 5 minutes. Lower the heat and add the condensed milk.
Brew for 15 minutes on low to medium heat. Bring to a heavy boil in the last 3-4 minutes. Strain and serve.

For naan khatai:
Preheat oven to 180C. Grease 2 baking sheets.
Cream ghee/butter and sugar until light white in colour. Sift nutmeg, cardamom, salt, bicarbonate of soda, baking powder, semolina and flour.
Fold in dry ingredients to form a soft biscuit dough.
Shape dough into rounds and place on the baking sheets. Press a whole almond in the center of the round.
Bake for 5 minutes. Bring the oven temperature down to 160C and bake for 20 minutes until golden brown.
Remove from the oven and cook down until the biscuits are crisp.
