Golden Cloud Gingerbread Men Cookies

The perfect gingerbread man, his quiet, his sweet and leaves you wanting more.

For the gingerbread cookies:
1 ¾ cup Golden Cloud Cake Flour
½ tsp baking soda
½ Tbsp ground ginger
½ Tbsp ground cinnamon
¼ ground nutmeg
¼ ground cloves
Pinch of salt
1/3 cup butter, room temp
¼ cup brown sugar
1 egg
¼ cup honey

For the royal icing:
1 egg white
½ tsp lemon juice
1 ½ icing sugar, sifted

1 packet Jelly Tots


For the gingerbread cookies
In a large bowl, whisk together the flour, baking soda and spices. In a separate bowl, beat the butter until light and fluffy. Add the sugar and beat until fluffy. Add the egg and honey and combine.
Gradually add the flour mixture and mix until combined, do not over mix.
Warp the dough and chill in the fridge for at least an hour.
Roll the dough out between two pieces of parchment paper to 3mm thickness. Place the rolled-out dough back in the fridge for 10 minutes. Using little breadman shaped cookie cutters or a knife and stencil, cut out shapes from the dough and place on the baking sheet. Bake for 8-10 minutes. Cool completely

For the royal icing:
Beat the egg whites and lemon juice together. Adding the icing sugar until the mixture holds stiff peaks. Transfer into a piping bag and decorate the gingerbread man cookies and top with Jelly Tots.
