Golden Cloud Raspberry-Coconut Friands with Star Anise Tea

 Friands, they are little petite cakes made with whisked egg whites, ground almonds, icing sugar that are the most delicious for your high tea.

Serves: 6-8
Time: 45 minutes

Ingredients:

150g butter, melted
75g ground almonds
180g icing sugar
50g plain Golden Cloud flour
5 egg whites
100g raspberries
¼ cup shredded coconut

Star anise tea:
2 tbsp star anise
1L water
1 tbsp honey

Method:

Preheat the oven to 180C and prepare a friand tin.
Sift together the ground almonds, icing sugar and flour in a medium bowl.
Whisk the eggs until they a very frothy.
Fold the flour mixture and frothy eggs until combined. Lightly fold in the melted butter, ensuring the mixture stays light. Fold in the half the fruit and coconut.
Pour the mixture into the baking tin, place the remaining raspberries and coconut on top of each friand and bake for 25-30 minutes or until golden.
Allow to cool in the pan, run a knife around the edge of the cakes to loosen. Remove the cakes from the pan.
To make the tea, crush the star anise in a pestle and mortar and place in a tea pot.
Bring the water to a boil and pour over the crushed seeds.
Allow the mixture to steep for 10-12 minutes.
Serve hot with the friands.

Chefs Tip: Friands are small almond based cakes which use egg whites as the raising agent.
