
Golden Cloud Vetkoek and Mince served with Mango and Ceylon Ice Tea
Vetkoek has made for the perfect South African street food, with all our beautiful cultures often having their own take on the flavourful filling!

Ingredients:
For bread:
500g Golden Cloud 3-in-1 Mix
350ml lukewarm water
5g instant yeast
1.5L cooking oil
Mince:
1 small onion, finely chopped
2 garlic cloves
2 bay leaves
500g mince
2 birds eye chili, finely chopped
2 tbsp tomato paste
2 tbsp curry powder
2 tbsp garum masala
2 tomatoes, grated
1 tbsp brown sugar
1 cup beef stock
Oil for frying
For ice tea:
4 cups water
4 cups Ceylon teabags
1L mango juice
Crushed ice
Mint
Method:
Heat the oil for deep frying
Mix the dry ingredients, then make a well in the center. Pour in the water, mixing carefully until your dough is a smooth, wet dough. It should be sticky but not too wet.
Divide the dough into 12 balls.
Cover the dough balls and cover. Keep in a warm place until doubled in size.
Fry the dough balls in batches of four until golden brown.
In the meantime, drizzle the canola oil in a pan and heat. Add the onion, garlic, bay leaves and sauté on medium heat for 2 minutes. Add the mince and brown for a minute. Add the chilli, tomato paste, curry powder, garum masala and cook for 2 minutes until browned. Add the tomatoes, brown sugar and water and simmer for 10 minutes or until cooked
For the ice tea, place 4 cups of water into a pot and bring to a boil. Add the teabags and steep for 5 minutes. Let it cool down, then place in the refrigerator and chill.
Place a good amount of ice cubes into glasses. Fill the cup half way with mango juice. Then fill the rest with the cold Ceylon tea. Stir
