Grilled Nectarine and Halloumi Salad

A fresh and zesty salad, using the trusty Weber braai to add a smokiness to the nectarine.

  • 400g Halloumi Cheese, thickly sliced
  • 4 ripe Nectarines, pitted and quartered
  • 70g Prosciutto
  • 100g Baby Spinach, Rocket & Watercress Salad
  • 1 small Red Onions, thinly slices
  • ½ Pecans, toasted
  • ¼ cup Balsamic reduction
  • Olive oil

How To Make

  1. Prepare the Weber braai.
  2. Brush olive oil on the nectarines and halloumi, place on the braai and grill for about 2-3 minutes on each side until grill marks appear.
  3. Lay the slices of prosciutto out on a baking sheet and drizzle a bit of oil.
  4. Cook in the oven until golden and crispy, about 5 minutes. Turning over halfway through cooking for even crisp
  5. Assemble the salad- in a large salad bowl add the salad greens, top with the nectarines, halloumi, prosciutto, red onions and pecans.
  6. Drizzle over the balsamic reduction and serve.
