
Grilled Nectarine and Halloumi Salad
A fresh and zesty salad, using the trusty Weber braai to add a smokiness to the nectarine.

Time: 25 minutes
Ingredients:
- 400g Halloumi Cheese, thickly sliced
- 4 ripe Nectarines, pitted and quartered
- 70g Prosciutto
- 100g Baby Spinach, Rocket & Watercress Salad
- 1 small Red Onions, thinly slices
- ½ Pecans, toasted
- ¼ cup Balsamic reduction
- Olive oil
How To Make
- Prepare the Weber braai.
- Brush olive oil on the nectarines and halloumi, place on the braai and grill for about 2-3 minutes on each side until grill marks appear.
- Lay the slices of prosciutto out on a baking sheet and drizzle a bit of oil.
- Cook in the oven until golden and crispy, about 5 minutes. Turning over halfway through cooking for even crisp
- Assemble the salad- in a large salad bowl add the salad greens, top with the nectarines, halloumi, prosciutto, red onions and pecans.
- Drizzle over the balsamic reduction and serve.
