Ham & Cheese Mini Lunchbox Quiches

- 1 roll, puff pastry
- 6 ham slices, chopped
- 8 eggs
- ½ cup milk
- ¼ cup cherry tomatoes, sliced
- 1 cup spinach, chopped
- 2 cups cheddar cheese, grated
How To Make Ham & Cheese Mini Lunchbox Quiches
- Preheat oven to 180°C, grease a muffin tray with cooking spray. Roll out puff pastry and cut the pastry into 8cm circles, then press the pastry into the muffin tin. Place into the oven and bake for 5 minutes. Meanwhile add ham, eggs, milk, cherry tomatoes, spinach, salt and pepper into a bowl and whisk until well combined. Spoon the mixture into the pastry shells, top with cheese and bake for 15 minutes until set.
