Hearty Sweetcorn Bread
A moist and rich corn bread made with Clover Mooi River Butter.

Cooking time: 30 – 45 minutes
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup bacon (cooked and chopped)
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 415g can cream-style sweetcorn
- 1/2 teaspoon salt
- 1/2 cup Clover Mooi River Butter
- 1/3 cup dark brown sugar
- 1 egg
- 1 cup buttermilk
- 2 tablespoons honey
How To Make Sweetcorn Bread
- Preheat oven to 200°C. Grease and line a loaf tin and set aside.
- In a large bowl mix together flour, baking soda, baking powder, chopped bacon and salt. In a separate bowl whisk butter, sugar and honey until completely smooth and thick.
- Then, whisk in the egg and buttermilk until combined. Add the wet ingredients into the dry ingredients then mix until combined. Avoid over-mixing.
- Pour batter into prepared loaf tin. Bake for 30 minutes or until golden brown on top and the center is cooked through. Use a skewer or toothpick to test.
- Allow to slightly cool before slicing and serving.
Chefs Tip:1.Bake in an oven-safe greased skillet for a heartier, crunchier crust at the same temperature for the same amount of time.
