Hearty Sweetcorn Bread

A moist and rich corn bread made with Clover Mooi River Butter.

Cooking time: 30 – 45 minutes

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup bacon (cooked and chopped)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 415g can cream-style sweetcorn
  • 1/2 teaspoon salt
  • 1/2 cup Clover Mooi River Butter
  • 1/3 cup dark brown sugar
  • 1 egg
  • 1 cup buttermilk
  • 2 tablespoons honey

How To Make Sweetcorn Bread

  1. Preheat oven to 200°C. Grease and line a loaf tin and set aside.
  2. In a large bowl mix together flour, baking soda, baking powder, chopped bacon and salt. In a separate bowl whisk butter, sugar and honey until completely smooth and thick.
  3. Then, whisk in the egg and buttermilk until combined. Add the wet ingredients into the dry ingredients then mix until combined. Avoid over-mixing.
  4. Pour batter into prepared loaf tin. Bake for 30 minutes or until golden brown on top and the center is cooked through. Use a skewer or toothpick to test.
  5. Allow to slightly cool before slicing and serving.

Chefs Tip:1.Bake in an oven-safe greased skillet for a heartier, crunchier crust at the same temperature for the same amount of time.
2.Wrap leftovers up tightly and store at room temperature for up to 1 week
