Huevos Rancheros

Ingredients:
- 2 large Nulaid eggs
- 2 small corn tortillas
- 1 cup canned diced tomatoes
- ½ small onion, finely chopped
- 1 garlic clove, minced
- ½ tsp cumin
- ½ tsp smoked paprika
- 1 small chilli, finely chopped (optional)
- ¼ cup black beans, drained and rinsed (optional)
- ½ avocado, sliced
- ¼ cup crumbled feta or grated cheese
- Fresh coriander, for garnish
- 1 tbsp olive oil
- Salt and black pepper, to taste
How To Make Huevos Rancheros
- Heat ½ tbsp olive oil in a pan over medium heat.
- Add onions, garlic, and chilli, sautéing until soft.
- Stir in diced tomatoes, cumin, smoked paprika, and black beans.
- Simmer for 5 minutes until slightly thickened.
- Season with salt and pepper.
- In a separate pan, heat the remaining olive oil and crisp up the tortillas until golden.
- Set aside.
- In the same pan, fry the eggs to your desired doneness.
- To serve, spoon the warm tomato salsa over the crispy tortillas, top with the fried eggs, and garnish with avocado, cheese, and fresh coriander.
- Serve immediately and enjoy!
