Jam & Custard Doughnuts

A classic treat with Clover Custard!

  • For the doughnuts:
  • 2 ½ cups cake flour
  • ¼ cup castor sugar
  • Pinch of salt
  • ½ cup milk, lukewarm
  • 2 Tbsp butter, melted
  • 2 egg yolks
  • 1 Tbsp instant yeast
  • To serve:
  • Clover Custard
  • strawberry jam
  • icing sugar

How To Make Jam & Custard Doughnuts

  1. In a large bowl add lukewarm milk, sugar and yeast let it sit for a few minutes until the yeast becomes frothy, then add in melted butter and egg yolks, whisk until well combined.
  2. Sift in flour and salt. Mix well using a wooden spoon until the dough comes together, then transfer the dough to a floured work surface and knead for 6 – 8 minutes.
  3. Grease a large mixing bowl with oil, then place the dough into the bowl, cover the dough and allow it to rest for at least 1 hour, once the dough has risen and doubled in size transfer the dough to a floured work surface.
  4. Cut the dough into 12 equal balls and roll the dough into oblong shapes, and allow it to rest for another 10 minutes before frying.
  5. Heat oil in a large saucepan over medium heat, then fry the doughnuts in batches for 2 -3 minutes on each side, once the doughnuts are ready drain on paper towel and allow it to cool down.
  6. Use a serrated knife, make a deep cut lengthways down the middle of each cooled doughnut, then fill with strawberry jam, Clover Custard, and dust with icing sugar.
