Jam & Custard Doughnuts
A classic treat with Clover Custard!

Ingredients:
- For the doughnuts:
- 2 ½ cups cake flour
- ¼ cup castor sugar
- Pinch of salt
- ½ cup milk, lukewarm
- 2 Tbsp butter, melted
- 2 egg yolks
- 1 Tbsp instant yeast
- To serve:
- Clover Custard
- strawberry jam
- icing sugar
How To Make Jam & Custard Doughnuts
- In a large bowl add lukewarm milk, sugar and yeast let it sit for a few minutes until the yeast becomes frothy, then add in melted butter and egg yolks, whisk until well combined.
- Sift in flour and salt. Mix well using a wooden spoon until the dough comes together, then transfer the dough to a floured work surface and knead for 6 – 8 minutes.
- Grease a large mixing bowl with oil, then place the dough into the bowl, cover the dough and allow it to rest for at least 1 hour, once the dough has risen and doubled in size transfer the dough to a floured work surface.
- Cut the dough into 12 equal balls and roll the dough into oblong shapes, and allow it to rest for another 10 minutes before frying.
- Heat oil in a large saucepan over medium heat, then fry the doughnuts in batches for 2 -3 minutes on each side, once the doughnuts are ready drain on paper towel and allow it to cool down.
- Use a serrated knife, make a deep cut lengthways down the middle of each cooled doughnut, then fill with strawberry jam, Clover Custard, and dust with icing sugar.
