
Malva Pudding with Custard
A classic made better with Clover Custard!

Ingredients:
- For the malva:
- 1 cup sugar
- 2 eggs
- 1 ½ Tbsp Apricot jam
- 1 ½ cups flour
- 1 tsp bicarbonate of soda
- ½ tsp salt
- 2 Tbsp oil
- 1 tsp white vinegar
- ½ cup double thick plain yoghurt
- For the sauce:
- 1 cup fresh cream
- ½ butter, cubed
- ½ cup castor sugar
- ½ cup water
- To serve:
- Clover Custard
How To Make Malva Pudding
- Preheat your oven to 180°.
- Grease a baking dish with cooking spray.
- In a large bowl, beat together the sugar and the eggs until light and fluffy, add in the apricot jam and beat until smooth.
- Combine the yoghurt, oil, and vinegar.
- Sift the flour, bicarbonate of soda and the salt into the egg mixture, then add in wet ingredients while mixing the batter.
- Pour the batter into the prepared baking dish and bake for 40 minutes.
- For the sauce: Add all ingredients into a saucepan over low heat and stir until the butter is melted and sugar has dissolved.
- When the pudding is ready, pour the sauce over the pudding and allow it to stand for 10 minutes before serving.
- Serve immediately with custard or whipped cream.
