Malva Pudding with Custard

A classic made better with Clover Custard!

Ingredients:

  • For the malva:
  • 1 cup sugar
  • 2 eggs
  • 1 ½ Tbsp Apricot jam
  • 1 ½ cups flour
  • 1 tsp bicarbonate of soda
  • ½ tsp salt
  • 2 Tbsp oil
  • 1 tsp white vinegar
  • ½ cup double thick plain yoghurt
  • For the sauce:
  • 1 cup fresh cream
  • ½ butter, cubed
  • ½ cup castor sugar
  • ½ cup water
  • To serve:
  • Clover Custard

How To Make Malva Pudding

  1. Preheat your oven to 180°.
  2. Grease a baking dish with cooking spray.
  3. In a large bowl, beat together the sugar and the eggs until light and fluffy, add in the apricot jam and beat until smooth.
  4. Combine the yoghurt, oil, and vinegar.
  5. Sift the flour, bicarbonate of soda and the salt into the egg mixture, then add in wet ingredients while mixing the batter.
  6. Pour the batter into the prepared baking dish and bake for 40 minutes.
  7. For the sauce: Add all ingredients into a saucepan over low heat and stir until the butter is melted and sugar has dissolved.
  8. When the pudding is ready, pour the sauce over the pudding and allow it to stand for 10 minutes before serving.
  9. Serve immediately with custard or whipped cream.
