Jamaican Jerk Seasoning

Bring authentic jerk flavor to your cooking!

Makes: ± 2 cups

Ingredients:

  • 12 habanero peppers, seeds removed for medium heat (keep some seeds for extra heat)
  • 8 cloves garlic
¼ cup fresh ginger, chopped

  • 8 stalks green onion (scallion), chopped
  • ½ cup fresh thyme leaves (or ¼ cup dried)

  • ¼ cup soy sauce
 
  • ¼ cup lime juice (or white vinegar)
 
  • ¼ cup vegetable oil
 
  • ¼ cup dark brown sugar
  • ¼ cup whole allspice berries (pimento)

  • 2 whole cinnamon sticks (about 7–8 cm each)

  • 1 whole nutmeg

  • 2 tsp whole black peppercorns

How To Make Jamaican Jerk Seasoning

  1. Toast dry ingredients in a dry pan over medium heat until fragrant (about 2–3 minutes), shaking pan so they don’t burn.
  2. Cool, then grind. 
Add ground spices + all fresh ingredients to blender or food processor.
  3. Blend until smooth and thick. Add 1–2 Tbsp water or oil only if needed.
