Jungle Savoury Oats with Fried Egg
Most breakfasts are a choice between eggs on toast, or a quick bowl of Jungle Oats! BUT we’re about to do something crazy. We are putting a fried egg on oats and giving you the best of both worlds, with our rendition of Savoury Oats! You’re gonna love it!

Ingredients:
1 Cup Jungle large flake oats
1 onion, diced
1 tin chopped and peeled tomato
2 Cups baby spinach, wilted
100g chorizo, sliced
2-4 fried eggs, to serve
½ Tbsp sugar
Hot sauce, to serve
Salt and pepper, to taste
Method:
Prepare the oats according to package instructions and set aside.
Bring a pan to a medium heat, add the chorizo slices and allow the fat to render and the chorizo to become crispy, set aside.
Add the chopped onion to the pan and allow too cook for 3-4 minutes before adding the tinned tomato.
Allow the tomato mixture to cook down and reduce for 8-10 minutes. Season with salt, pepper and sugar. Mix through the prepared oats.
Divide the oats into two separate bowls and top with fried chorizo, wilted spinach and fried eggs.
Serve with a drizzle of hot sauce.
Chefs Tip:
- You can add any toppings of your choice to this breakfast, and also use a boiled or poached egg if you prefer
