Clover Authentikos Breakfast Loaded Hashbrowns

The weekend is made for taking it easy and treating yourself after a long week. Brunchworthy bites need not take up a lot of your much needed “me time” and our loaded breakfast hash browns shows just how weekend mornings should be.

Ingredients:

For the hash browns
3 large potatoes, peeled and parboiled
1 egg
1 tbsp corn flour
Salt and pepper to taste
Oil for frying


For the topping
1 cup Clover Authentikos, plain flavour
Smoked salmon
½ red onion, thinly sliced
1 cup pickled gherkins, sliced
¼ cup capers
Handful fresh dill fronds
1 tbsp chives, chopped
Salt and pepper to taste
Extra virgin olive oil

Method:

Preheat the oven to 180C
Grate the parboiled potatoes and add to a mixing bowl with the egg and corn flour. Season with salt and pepper. Mix to combine. Shape into hasbrowns and place onto a greased, lined baking sheet and place into freezer.
You could also shape it into one large round or smaller rounds.
Heat up the oil and fry off the hash browns until golden brown, draining excess oil on paper towel.
Dollop and spread the Clover Authentikos yoghurt onto hashbrown, top with smoked salmon strips followed by red onion, gherkins, capers, dill and chives. Season with salt and pepper and finish off with a drizzle of extra virgin olive oil

Chefs Tip:

You can add as many of your favourite toppings to these hash browns  – like bacon and egg would not go amiss
