
KOO Quesadillas
Colour is the key: the colours of fruits and vegetables are often linked to the nutrients they contain. Green, yellow, orange, red or purple: fruit and vegetables keep us healthy and add variety, taste, texture to our diets. We should aim for variety during meal times and not stick to a single type.

Ingredients:
8 white flour tortillas
2 Cup grated cheese
1 tin KOO Mixed Beans tin, drained and rinsed
1 tin KOO Whole Corn Kernels
1 tin KOO Chakalaka of your choice
Hummus:
1 tin KOO Chickpeas, drained and rinsed
¼ Cup olive oil
1 clove garlic
½ tsp ground cumin
salt and pepper, to taste
Peach salsa:
½ tin KOO Peach Slices
2 tomatoes, diced
½ red onion, finely diced
handful fresh coriander
Method:
To make the hummus, add all the ingredients into a blender and blend until smooth. Add a splash of water to the hummus to loosen up the texture to make it spreadable. Season to taste.
To make the quesadilla, spread the hummus onto the base of four wraps. Then evenly spread out the beans, corn and chakalaka over the hummus, sprinkle over the cheese and top with the remaining wrap.
Preheat a non-stick pan and toast off each quesadilla until golden brown and the cheese has melted.
Serve the quesadilla sliced up and with the peach salsa.
To make the salsa, cube the peaches and add them to a bowl with the remaining salsa ingredients.
Chefs Tip:
Make sure the pan is not too hot when toasting off the quesadillas, you need it to toast and melt the cheese on the inside.
