KOO Bean and Chorizo Stew
A great way to get in your 5-A-Day and keep the whole fam happy and fed!

Ingredients:
150-200g chorizo sausage, thinly sliced
1 tin Koo baked beans
1 tin Koo red kidney beans, drained & rinsed
1 tin whole tomatoes
2 Cup beef stock
1 red pepper, chopped
1 onion, finely chopped
1 Tbsp Koo tomato paste
1 tsp smoked paprika
salt and pepper, to taste
toasted garlic bread or ciabatta bread to serve
basil pesto, to serve
Method:
Bring a saucepot to a medium heat, add the chorizo and allow to render off and crisp up. Once the chorizo has crisped up, remove from the pot and set aside.
Add the onion and sauté for 3-4 minutes. Add garlic, red peppers and tomato paste and then add the tinned tomatoes and beef stock. Allow the mixture to cook down for 15-20 minutes until thickened.
Then add the tinned Koo beans and chorizo to the mixture and stir through. Allow the mixture to cook for another 10 minutes, season well with salt and pepper.
Serve topped with basil pesto and toasted bread.
Chefs Tip: Leave out the chorizo and swap the beef stock for vegetable stock if you want to keep it vegetarian.
