KOO Peach Cobbler
Eating healthy can be tough but all you really need to do is make sure you get your two fruits and three veggies to your daily meals and you’re on the way to being the best version of yourself with your five a day!

Ingredients:
1 KOO tinned peach slices
1 KOO tinned halves
Zest and juice of 2 limes
½ Cup blueberries
½ tsp cinnamon
Pinch of salt
Cobbler topping:
1 Cup self-raising flour
½ Cup desiccated coconut
⅓ Cup brown sugar
100g Butter, melted
1 Egg, beaten
¼ Cup milk
¼ tsp baking powder
¼ tsp salt
Ice cream, custard or whipped cream, to serve
Method:
Preheat the oven to 180°C.
Drain out half the syrup from the tinned peaches and then add the rest into a mixing bowl. Add the ground cinnamon, blueberries and zest and juice of 2 limes. Mix to combine
To make the cobbler topping, place the flour, desiccated coconut, brown sugar, baking powder and salt into a mixing bowl and stir to combine. Add the melted butter, milk and eat and fold in until a batter has formed.
Pour the batter into an ovenproof dish and then top with the peach mixture.
Place into the oven to bake for 35-40 minutes, until the batter has turned a golden brown colour.
Serve with ice cream, custard or whipped cream.
Chefs Tip:
- You can replace the tinned peaches with tinned guava or fruit cocktail.
- Add some chopped nuts or chocolate to the cobbler mix if you would like to add some extra texture or flavour.
