Lemon Delicious Pudding
If you are planning on treating yourself to something delicious this weekend, we have a classic winter pudding that is budget and family friendly! Our Lemon Delicious pudding comes together with just a few ingredients and will satisfy any sweet tooth craving for that afternoon tea.

100g butter, softened
¾ cup castor sugar
juice and zest of lemon
4 eggs, separated
400ml coconut milk
¾ cup Clover Fresh milk
½ cup self raising flour
Icing sugar to serve
Lemon zest to serve
Preheat the oven to 180C. Grease an oven proof baking dish.
In a mixing bowl, beat together the butter, sugar, lemon zest and egg yolks until pale and creamy. Gradually add in the coconut milk, Clover fresh milk and lemon juice. Beat until smooth and combined. Sift in the flour and gently fold.
Beat the egg whites until stiff peaks form and fold through the batter. Pour into greased baking dish and bake for 35-40 minutes or until set. Dust with icing sugar and lemon zest to serve.
- If you need the oven for your Sunday roast, you can easily make this dish in a slow cooker – just cook it for a longer time
- You can add more lemon juice to the batter, according to your flavour preference
