Lactose-Free Fruity Mini Panna Cotta
A dessert everyone can enjoy thanks to Clover Nolac!

Ingredients:
- 1 ½ Cups Nolac Lactose free plain dairy snack
- 1 Cup Nolac Lactose free milk
- ¼ Cup Castor sugar
- 10g Powdered gelatine
- 1 tsp Vanilla essence
- 2 Tbsp Toasted desiccated coconut
- 1 Tbsp lemon juice
- 1 Tbsp Strawberry jam
- ½ tsp lemon zest
How To Make Lactose-Free Panna Cotta
- To prepare the Panna Cottas, add 3 tbsp of water to a small bowl, sprinkle over the gelatine powder and leave to bloom until water is fully absorbed.
- In a large saucepan bring the yoghurt, milk and sugar to a boil and stir to dissolve the sugar. Lower the heat to a light simmer.
- Pour some of the hot mixture form the saucepan into the bowl of gelatine and stir to dissolve.
- Add the gelatine mixture to the saucepan and stir until completely dissolved.
- Remove the pot from the heat, add the vanilla essence and divide into three.
- To prepare the lemon one, add ½ tsp lemon zest and 1 Tbsp lemon juice to the mixture, pour into mould, cover with cling wrap and place in the fridge for 4 hours or until set.
- To prepare the strawberry one add 1 Tbsp of strawberry jam to the mixture and combine, cover with cling wrap and place in the fridge for 4 hours or until set.
- To prepare the coconut one, add the coconut and cover with cling wrap and place in the fridge for 4 hours or until set.
You can truly never go wrong with a classic vanilla panna cotta. It is the ultimate crowd-pleaser because it feels very fancy but appeals to anyone who loves a good creamy sweet treat. The ratio of the topping to the cream looks perfect here, ensuring every single bite has a bit of everything.
