Lamb Rogan Josh A classic Rogan Josh curry – thanks to Cape Herb & Spice meal solutions! Ingredients:1 onion, diced 1 Tbsp canola oil 4 garlic cloves, crushed2 Tbsp Cape Herb & Spice Rogan Josh 1kg lamb knuckles or stewing lamb1 tin whole peeled tomatoes, chopped 1 Tbsp tomato paste 100ml water 150ml Greek yoghurt Handful fresh coriander leaves, chopped How To Make Lamb Rogan Josh In a heavy based pan, sauté the onion in oil until soft. Add the garlic, ginger and spice blend and fry for a further 5 minutes, stirring regularly. Stir in the meat before adding the tomatoes, tomato paste and water and mixing well. Reduce the heat and simmer for 40-60 minutes or until the meat is tender and the sauce is richly thick. Stir in the yoghurt before serving with steamed basmati rice and a generous sprinkling of fresh coriander.
