Lamb Rogan Josh

A classic Rogan Josh curry   –  thanks to Cape Herb & Spice meal solutions!

Ingredients:

  • 1 onion, diced
  • 1 Tbsp canola oil
  • 4 garlic cloves, crushed
  • 2 Tbsp Cape Herb & Spice Rogan Josh
  • 1kg lamb knuckles or stewing lamb
  • 1 tin whole peeled tomatoes, chopped
  • 1 Tbsp tomato paste
  • 100ml water
  • 150ml Greek yoghurt
  • Handful fresh coriander leaves, chopped

How To Make Lamb Rogan Josh

  1. In a heavy based pan, sauté the onion in oil until soft.
  2. Add the garlic, ginger and spice blend and fry for a further 5 minutes, stirring regularly.
  3. Stir in the meat before adding the tomatoes, tomato paste and water and mixing well.
  4. Reduce the heat and simmer for 40-60 minutes or until the meat is tender and the sauce is richly thick.
  5. Stir in the yoghurt before serving with steamed basmati rice and a generous sprinkling of fresh coriander.
