Lazy Makoti’s Lamb Biryani with Tastic Sella Basmati Rice

Biryani is considered the crown jewel of Pakistan food and rice.

Ingredients:

1&1/2 cups Tastic Sella extra-long rice Rice
1 cup lentils
800g Lamb, cut into chunks
3 Tablespoons Vegetable oil
1 large Onion, chopped
1 teaspoon ginger, minced
2-3 Cloves Garlic, crushed
1 Tin canned tomatoes (or 3 tomatoes peeled and cubed)
2 tbsp Curry Powder
1 tbsp Cumin
1 tsp Paprika
1 tsp Turmeric
1 tbsp Ground Coriander
400ml stock
1 Green Chilli, chopped (optional)
Salt and Pepper
2 potatoes, peeled and cubed

Method:

Cook the rice and lentils with a little bit of yellow food colouring or turmeric separately and put aside.

Heat the oil in a saucepan. Brown the lamb pieces and put aside.

To the pot, add onion, garlic, ginger, chilli and all the spices, stirring frequently until all mixed together. Pour in canned tomatoes, the browned meat and pour in stock.

Let it simmer on low – medium heat for 20 minutes then add in the potatoes and cook another 20 minutes till potatoes are cooked and tender. Salt and Pepper to taste.

Mix the Lamb Curry with rice, if it’s soggy, cover with foil and bake in 180degrees oven for about 15 minutes.

Chefs Tip: This recipe is versatile and you have the option to substitute the lamb with any other meat of your choice such as chicken, beef or fish.
If you’re vegetarian you can use chickpeas instead of meat which is absolutely delicious.
