3 chicken breast fillets, cubed 1 tbsp garlic powder 1 tbsp 5 spice 1 tbsp ground coriander 1 tsp turmeric 1 tbsp paprika 1 tbsp garlic and ginger 1 red bell pepper handful fresh parsley, roughly chopped juice and zest of 1 lemon 1 jalapeno, roughly chopped 1 large tomato ½ cup Clover classic dairy snack, plain flavor 2 tbsp olive oil
Method:
To a blender, add the garlic and ginger, bell pepper, tomato, parsley, juice and zest of lemon, jalapeno and Clover Classic dairy snack. Blitz until smooth and pour over cubed chicken. Sprinkle over the spices and mix to combine. Allow to marinade for at least 20 minutes, overnight is best. Skewer the chicken grill until cooked through.
Alternatively, bake in the oven at 180C, until cooked through.
Chefs Tip: Serve with naan bread and a cucumber, tomato red onion salad.
