LemonGold and Herb Chicken with Salad
The star of the show is none other than the perfect citrus from LemonGold bringing a vibrant twist to the classic chicken dish.

Serves: 4-6
Time: 1 hour
Ingredients:
- For the chicken:
- 8 chicken thighs and drumsticks
- ¼ olive oil
- 100g butter
- 3 tbsp Dijon mustard
- 1 tbsp oregano
- 1 tbsp tarragon
- 2 sprigs fresh rosemary
- 4 sprigs fresh thyme
- 2 garlic cloves, minced
- 2 LemonGold
- Salt
- Pepper
- For the salad:
- 300g salad greens
- 1 Avocado, sliced
- 1 cup cherry tomatoes, halved
- 1-2 blocks feta, crumbled
- ½ vinaigrette
How To Make:
- Preheat the oven to 180C
- In a large bowl, combine the chicken, olive oil, Dijon mustard, oregano, tarragon, rosemary, thyme, garlic, salt and pepper.
- Slice the lemons into thin rounds and add to the chicken mixture.
- Toss to coat the chicken evenly and allow to marinate for at least 15 minutes.
- Transfer into a roasting dish, top with the blocks of butter and roast for 30-35 minutes or until chicken is cooked through.
- In the meantime, toss together the salad ingredients.
- Once the chicken is ready, serve with the salad.
