LemonGold and Herb Chicken with Salad

The star of the show is none other than the perfect citrus from LemonGold bringing a vibrant twist to the classic chicken dish.

Serves: 4-6
Time: 1 hour


  • For the chicken:
  • 8 chicken thighs and drumsticks
  • ¼ olive oil
  • 100g butter
  • 3 tbsp Dijon mustard
  • 1 tbsp oregano
  • 1 tbsp tarragon
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 2 garlic cloves, minced
  • 2 LemonGold
  • Salt
  • Pepper
  • For the salad:
  • 300g salad greens
  • 1 Avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1-2 blocks feta, crumbled
  • ½ vinaigrette

How To Make:

  1. Preheat the oven to 180C
  2. In a large bowl, combine the chicken, olive oil, Dijon mustard, oregano, tarragon, rosemary, thyme, garlic, salt and pepper.
  3. Slice the lemons into thin rounds and add to the chicken mixture.
  4. Toss to coat the chicken evenly and allow to marinate for at least 15 minutes.
  5. Transfer into a roasting dish, top with the blocks of butter and roast for 30-35 minutes or until chicken is cooked through.
  6. In the meantime, toss together the salad ingredients.
  7. Once the chicken is ready, serve with the salad.
