
Matilda Inspired Chocolate Cake
Everyone remembers THAT cake scene in Matilda! We grabbed our trusty Golden Cloud mix for this indulgent recipe.

Serves: 8-12
Ingredients:
- 2x Golden Cloud Chocolate Cake Mixes
- 2 cups buttermilk
- 4 eggs
- 300ml oil
- For the ganache:
- 400g Beacon Midnight Velvet
- 400g cream
How To Make Matilda Inspired Chocolate Cake
- Preheat the oven to 180C and prepare 3 round cake tins.
- Place the cake mixes in a large bowl and create a well in the centre.
- In a jug, whisk together the buttermilk, eggs and oil.
- Pour the wet ingredients into the dry and stir until fully incorporated.
- Divide the batter amongst the cake tins and bake for 25-30 minutes or until a skewer inserted comes out clean.
- Make the ganache; heat the cream in a saucepan until just simmering.
- Place the chocolate in a medium bowl.
- Pour the hot cream over and stir until melted and smooth.
- Cover the ganache with plastic wrap and place in the fridge to cool and thicken.
- The ganache must be thickened but soft enough to spread.
- Layer the sponges with the ganache in between.
- Spread the left-over ganache all around the cake.
- Slice and enjoy!
