Matilda Inspired Chocolate Cake

Everyone remembers THAT cake scene in Matilda! We grabbed our trusty Golden Cloud mix for this indulgent recipe.

  • 2x Golden Cloud Chocolate Cake Mixes
  • 2 cups buttermilk
  • 4 eggs
  • 300ml oil
  • For the ganache:
  • 400g Beacon Midnight Velvet
  • 400g cream

How To Make Matilda Inspired Chocolate Cake

  1. Preheat the oven to 180C and prepare 3 round cake tins.
  2. Place the cake mixes in a large bowl and create a well in the centre.
  3. In a jug, whisk together the buttermilk, eggs and oil.
  4. Pour the wet ingredients into the dry and stir until fully incorporated.
  5. Divide the batter amongst the cake tins and bake for 25-30 minutes or until a skewer inserted comes out clean.
  6. Make the ganache; heat the cream in a saucepan until just simmering.
  7. Place the chocolate in a medium bowl.
  8. Pour the hot cream over and stir until melted and smooth.
  9. Cover the ganache with plastic wrap and place in the fridge to cool and thicken.
  10. The ganache must be thickened but soft enough to spread.
  11. Layer the sponges with the ganache in between.
  12. Spread the left-over ganache all around the cake.
  13. Slice and enjoy!
