Mediterranean Inspired Summer Platter

Summertime calls for bright, shareable meals, and this Mediterranean inspired summer platter delivers just that! With minimal prep and maximum flavour, it’s perfect for casual dining or entertaining.

Ingredients:

  • 2 boneless, skinless chicken thighs
  • 2 Tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • 1 tsp salt
  • ½ tsp black pepper
  • Juice of ½ lemon

To serve:

  • 1 cup store-bought hummus
  • 1 cup ready-made tzatziki
  • 1 cup ready-made salsa
  • cucumber ribbons
  • ½ cup Kalamata olives
  • ½ cup crumbled feta cheese
  • 1 small red onion, thinly sliced
  • Flat breads, cut into triangles and toasted
  • Any grilled veggies of your choice
  • Fresh parsley or mint leaves for garnish
  • Lemon wedges

How To Make Mediterranean Inspired Summer Platter

  1. Preheat a griddle pan or skillet over medium-high heat. In a small bowl, mix olive oil, lemon juice and spices to make a marinate. Add the boneless chicken thighs into the marinate, coat it evenly. Thread the chicken thighs onto skewer sticks, then cook the chicken for 6 – 7 minutes per side, until cooked through.
  2. Allow the chicken to rest for about 5 minutes before serving, place the chicken skewers into a large platter. Spoon hummus, tzatziki into small serving bowls, then place onto the platter. Lastly add cucumber ribbons, olives, feta, grilled veggies. Garnish with fresh herbs and lemon wedges.
