
Roasted Curried Chicken Pitas
If you’re looking for a dish that’s packed with flavour, easy to prepare, and perfect for lunch or dinner, these roasted curried chicken pitas are sure to hit the spot!

Cooking time: 20 – 40 minutes
Ingredients:
For the roasted curried chicken:
- 2 boneless, skinless chicken breasts (or thighs)
- 2 Tbsp olive oil
- 1 Tbsp curry powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp turmeric
- ½ tsp cayenne pepper
- Salt & pepper, to taste
For the yoghurt sauce:
- ½ cup plain Greek yogurt
- 1 Tbsp lemon juice
- 1 Tbsp olive oil
- 1 garlic clove, minced
- ½ tsp ground cumin
- Salt and pepper to taste
To serve:
- 4 pita breads
- 2 cups cup shredded lettuce or rocket leaves
- ½ cup shredded carrots
- ½ red onion, thinly sliced
- cucumber ribbons
- fresh coriander
- lemon wedges
How To Make Roasted Curried Chicken Pita
- Preheat the oven to 200°C. Line a baking tray with baking paper. In a bowl add olive oil along with all the spices and mix until well combined, then rub the spice mixture all over the chicken breasts. Place them on the prepared baking tray. Roast in the oven for 20-25 minutes, or until the chicken is cooked through. Remove and let rest for 5 minutes before slicing.
- For the sauce, add all ingredients into a bowl and mix until well combined, then season to taste with salt and pepper.
- Heat the pita breads in a dry skillet or microwave until soft and pliable. Spread a generous layer of yogurt sauce over each pita. Add in your toppings and roasted curried chicken. Garnish with fresh coriander, lemon wedge and serve immediately.
