Middle Eastern Chicken Sub with Feta & Olive Tapenade

Ingredients:
- For the chicken:
- 2 chicken breasts
- ½ cup plain yoghurt
- 1 Tbsp chermoula seasoning
- 1 Tbsp crushed garlic
- 1 Tbsp tomato paste
- 1 Tbsp lemon juice & zest
- salt & pepper
- 1 – 2 Tbsp olive oil
- For the olive tapenade:
- ½ cup kalamata olives, pitted
- 1 ½ Tbsp olive oil
- ½ Tbsp capers
- 1 clove garlic, minced
- 6 basil leaves
- Clover Feta Cheese, Mixed Herbs
- 1 loaf ciabatta, cut in half and lightly toasted
How To Make Middle Eastern Chicken Sub
- For the chicken: Start by preparing the marinade.
- In a large bowl add plain yoghurt, chermoula seasoning, garlic, tomato paste, lemon juice and zest, mix until well combined then add in chicken and allow this to marinade for at least 30 minutes.
- Heat a griddle pan over medium heat, then cook chicken for about 10 minutes or until the chicken is cooked through.
- Remove chicken from the pan and allow it to rest and cool before shredding.
- For the olive tapenade: Place all ingredients into a food processor and pulse until well combined.
- Assembly: Spread a generous amount of butter onto the toasted ciabatta bread, then spoon over the shredded chicken, top with olive tapenade and crumble over a generous amount of Clover Feta Cheese.
- Garnish with fresh basil leaves and enjoy!
