Bacon Jam, Avocado and Halloumi Rolls

Ingredients:

  • For the bacon jam:
  • 250g diced bacon
  • 1 tbsp oil
  • 1 onion, finely diced
  • ¼ cup treacle sugar
  • ¼ cup white vinegar
  • 1 tsp cayenne pepper
  • 2 Vita-Life large seeded rolls
  • 4 tbsp butter
  • 1 tbsp oil
  • 200g halloumi, cut into slices
  • 4 tbsp mayo
  • 40g rocket, washed
  • 1 avocado, sliced
  • 1 tomato, sliced

How To Make Bacon Jam, Avo and Halloumi Rolls

  1. Heat the oil in a pan over medium heat. Add the bacon and saute until cooked but do not allow to crisp.
  2. Remove the bacon from the pan and set aside.
  3. Add the onions to the same pan and cook until soft. Pour in a ¼ cup water, sugar and stir.
  4. Return the bacon to the pan, reduce the heat to low and simmer gently without bubbling.
  5. Cook for 20 minutes until reduced
  6. Add the vinegar and cayenne, cook for a further 20 minutes until the mixture is sticky and jam like.
  7. While preparing the bacon jam; cut the rolls in half and butter each roll.
  8. Heat a nonstick pan and toast the buns until golden on each side.
  9. Add the oil and fry the halloumi on both sides until golden brown.
  10. Transfer to a board, add the mayo to the base of each bun.
  11. Add the rocket, tomato, avo, halloumi
  12. Once the bacon jam is ready, add to the sandwich.
  13. Finish with the top bun and serve.
