Milk Tart Recipe

If there is one popular South African dessert that is always perfect for entertaining, it has got to be a milk tart! There’s no better afternoon tea time treat than this.

Ingredients:

  • Crust:
  • 120g Butter
  • 50g Sugar
  • 1/2 Egg
  • 180g Flour, sifted
  • 1tsp Vanilla Paste
  • 1/2tsp Royal Baking Powder
  • Filling:
  • 3 Cups Milk
  • 30g Butter
  • 30ml Cornflour
  • 30ml Cake flour
  • 1tsp Vanilla Paste
  • 2 drops Almond Essence
  • 2 Eggs

How To Make Milk Tart Recipe 

  1. Cream the butter and sugar until fluffy, then add in 1/2 egg, Vanilla paste and cream again.
  2. Add in the sifted flour and Royal Baking Powder.
  3. Mix until a soft dough has formed.
  4. Chill in the fridge for half an hour then roll out the dough/ press the dough into a 22cm round baking dish.
  5. Dock the pastry (lightly prick holes but not all the way through the pastry) using a fork.
  6. Blind bake for 10 minutes at 180’C, then remove the baking beans and bake for a further 10 minutes, or until golden brown.
  7. Remove from the oven and allow to cool.
  8. In a bowl, whisk together 1 cup of the milk with the Corn flour, Cake Flour, Vanilla Paste, Almond Essence and Eggs. Set aside.
  9. In a medium pot, heat up the remaining 2 Cups of milk and the butter.
  10. Once the butter has melted and the milk is hot, slowly pour the hot mixture into the egg mixture while whisking continuously to make sure the eggs don’t scramble.
  11. Once you have mixed everything together, return the mixture to the pot and cook on medium heat until the mixture has thickened.
  12. Make sure to continuously whisk to avoid lumps! This may take up to 10 minutes to thicken.
  13. Once the mixture has thickened, remove from the heat and quickly pour into the baked base.
  14. Dust generously with Cinnamon and allow to set in the fridge for a couple of hours before slicing into it.
