Lamington trifle Recipe

Trifle makes perfection for all the layered beautiful flavours.

Ingredients:

  • 2 pkts of raspberry jelly
  • 1 large punnet of raspberries
    (350 grams )
  • 3 pkts of lamingtons ( 15 lamingtons ) at Woolworths
  • For the ganache :
  • 60 grams of chocolate
  • 1/4 cup of cream
  • For the whipped cream :
  • 2 cups of cream
  • 1/2 cup of icing sugar
  • Chocolate creme pattisserie:
  • 2 cups of milk
  • 2 tablespoons of cake flour
  • 2 tablespoons of maizena
  • 100 grams of castor sugar
  • 6 egg yolks
  • 160 grams of milk chocolate
  • 1 teaspoon of vanilla

How To Make Lamington trifle 

  1. Make the jelly, follow instructions on the pack and add to the trifle bowl, refrigerate over night.
  2. Make the creme pattisserie
  3. Place the milk and vanilla into a small pot, bring to a simmer, remove from the heat.
  4. Mix the sugar , the flour , maizena and the egg yolks in a separate bowl to form a paste.
  5. Pour a third of the warm milk into the egg mixture and whisk vigorously.
  6. Pour the egg mixture into the saucepan with the milk and continue whisk on a low heat.
