Milk Tart Tortilla Dessert Wraps

Ingredients:

Milk tart filling:
1 cups Clover fresh milk
10g butter
1 tsp vanilla essence
1 tsp ground cinnamon
2 tbsp flour
2 tbsp cornflour
¼ cup sugar
pinch of salt
1 egg

Cinnamon sugar:
¼ granulated sugar
2 tsp ground cinnamon

2 tortilla wraps
50g ginger cookies, crushed

Method:

In a saucepan make the milk tart filling; combine half the milk, butter, vanilla essence and cinnamon. Bring to a gentle simmer. In a bowl whisk egg, add the flour, cornflour, remaining milk, sugar and salt until smooth. Slowly temper the hot milk into the egg mixture. Add the whole mixture back into the saucepan and whisk until the mixture thickens. Once thickened, pour the mixture into a bowl and cover with plastic wrap directly touching the mixture and cool completely in the fridge. Mix the ingredients for the cinnamon sugar. Cut the tortilla wrap halfway through, creating a flap over a ¼ of the wrap. In one quarter spoon over and 2 tbsp of the milk tart filling, sprinkle over 1 tbsp of the ginger crumb on top of the filling. In the second quarter sprinkle a tbsp of the cinnamon sugar. Alternate the fillings over the remaining quarters. Starting on the flapping quarter, fold the one quarter over the next quarter and then fold over 2 more times until you are left with a warp that is the size of one quarter. Heat a pan and toast the tortilla on both sides.

TIPS:

This recipe is extremely versatile, depending on what you are filling your wrap with, this can be enjoyed as a breakfast or it can be the perfect dessert after a great meal.

When covering the milk tart filling with plastic wrap to cool, ensure that the plastic wrap touches the surface of the milk tart as this will prevent a skin from forming.

You can make these wraps ahead of time and fill them, then when you are ready to serve you can simply toast them in a pan and then serve.

These may be served with ice cream, custard or even a drizzle of chocolate sauce. Anything that speaks to your heart!
