MILO Breakfast Waffle

Weekday mornings can get really hectic. There are countless to-dos but not a lot of time to do them. While many parents need to get many things done in the morning, one CANNOT let the morning rush cancel out the most important step and meal of our everyday life – Breakfast!

Serves: 4
Time: 30 minutes

Ingredients:

8 eggs, beaten
4 ham slices, cubed
½ Cup Mozzarella cheese, grated
parsley, finely chopped
salt and pepper, to taste

For serving:
1 avo, peeled & sliced
handful cherry tomatoes, sliced
1 Tbsp chopped chives

Method:

Preheat a waffle iron and spray it with a nonstick baking spray.
Place the egg, ham, grated cheese and parsley into a mixing bowl and combine. Season with salt and pepper.
Pour the filling about ¾ full in each waffle placement. Close the machine and allow the egg mixture to cook through for about 4-5 minutes.
Once the egg mixture has cooked remove the waffle from the machine, top with avo, tomato and chopped chives before serving with a hot or cold cup of milo.

Chefs Tip:

  • Do not forget to adjust the mixture measurements according to your waffle machine.
  • If you do not have a waffle machine you can use the same mixture to make an omelet, just add the avo, tomatoes and chives to the center of the omelet. 
  • Top with some baby spinach or rocket
  • Serve with a hot or cold cup/mug of milo.
