Minestrone Soup
Winter is here, and that means one thing, it’s soup season!
Ingredients:
- 1 pack Woolworths Minestrone Soup Mix
- 2–3 tbsp olive oil
- 2 tbsp tomato paste
- 100g chorizo, sliced
- 1 tin chopped tomatoes (400g)
- 2 cloves garlic, minced
- 1L vegetable or chicken stock (or more, to your desired consistency)
- A few sprigs fresh thyme
- 1–2 bay leaves
- Salt & pepper, to taste
- Parmesan rind while simmering for depth, or freshly grated parmesan to serve
- A handful of small pasta (like ditalini or orrecheti) added in the last 10–12 minutes
- Optional: chili flakes, if you like a gentle kick
How To Make Minestrone Soup
- Heat olive oil in a large pot over medium heat.
- Add the tomato paste and cook for 2–3 minutes, stirring often, until it darkens slightly and caramelizes.
- Add chorizo and fry off until caramelised.
- Add garlic and cook for another minute until fragrant.
- Add the chopped tomatoes, thyme, and bay leaves. Let it simmer for about 5 minutes to meld the flavours.
- Tip in the Woolworths Minestrone Soup Mix.
- Stir everything together and pour in your stock.
- Bring to a boil, then reduce to a gentle simmer.
- Cover partially and simmer for about 45 minutes, stirring occasionally, until all the vegetables are tender and the soup is rich and hearty.
- If adding pasta, toss it in for the last 10–12 minutes of cooking.
- Taste and adjust seasoning with salt and pepper.
- Remove thyme stems and bay leaves before serving.
- Stir in a splash of olive oil, grated parmesan, or a spoonful of pesto before serving.
