
Mini Bobotie Pies
The classic South African flavours in a mini version for any occasion!
Ingredients:
- Phyllo pastry, cut into squares
- ½ cup melted butter
- 500g beef mince
- 2 slices white bread
- 1 cup Clover Fresh milk
- 1 onion, chopped
- 2 cloves garlic, chopped
- 2 tbsp curry powder
- ¼ cup tomato paste
- 2 tbsp fruit chutney
- 1 tsp vinegar
- salt and pepper to taste
- For the topping:
- 2 eggs
- 1 cup Clover Fresh milk
- 1 tsp turmeric
- Few bay leaves
How To Make Mini Bobotie Pies
- Preheat the oven to 180C.
- Make the bobotie mixture by adding the bread slices to a plate or bowl and pour over the milk.
- Allow to soak and squeeze out the excess milk and tear into smaller pieces
- Sauté the onion and garlic in a large saucepan with a tablespoon of the melted butter.
- Add the beef mince and break up as the mince starts to cook.
- Add the curry powder, tomato paste, chutney, vinegar and the soaked bread pieces.
- Stir and allow to cook until the mince mixture is cooked through.
- Season with salt and pepper and add water if it becomes too dry.
- Mix the topping by combining the eggs, Clover Fresh milk and turmeric.
- To assemble, brush the phyllo squares with the melted butter and place into a muffin tin, so that it forms a shell.
- Scoop the mince mixture into the phyllo shells.
- Pour the milk mixture on top and garnish with a bay leaf.
- Bake for 15-20 minutes, until the topping is set. Serve warm!
