Mini Bobotie Pies

The classic South African flavours in a mini version for any occasion! 

Ingredients:

  • Phyllo pastry, cut into squares
  • ½ cup melted butter
  • 500g beef mince
  • 2 slices white bread
  • 1 cup Clover Fresh milk
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 tbsp curry powder
  • ¼ cup tomato paste
  • 2 tbsp fruit chutney
  • 1 tsp vinegar
  • salt and pepper to taste
  • For the topping:
  • 2 eggs
  • 1 cup Clover Fresh milk
  • 1 tsp turmeric
  • Few bay leaves

How To Make Mini Bobotie Pies

  1. Preheat the oven to 180C.
  2. Make the bobotie mixture by adding the bread slices to a plate or bowl and pour over the milk.
  3. Allow to soak and squeeze out the excess milk and tear into smaller pieces
  4. Sauté the onion and garlic in a large saucepan with a tablespoon of the melted butter.
  5. Add the beef mince and break up as the mince starts to cook.
  6. Add the curry powder, tomato paste, chutney, vinegar and the soaked bread pieces.
  7. Stir and allow to cook until the mince mixture is cooked through.
  8. Season with salt and pepper and add water if it becomes too dry.
  9. Mix the topping by combining the eggs, Clover Fresh milk and turmeric.
  10. To assemble, brush the phyllo squares with the melted butter and place into a muffin tin, so that it forms a shell.
  11. Scoop the mince mixture into the phyllo shells.
  12. Pour the milk mixture on top and garnish with a bay leaf.
  13. Bake for 15-20 minutes, until the topping is set. Serve warm!
