Mixed Berry Breakfast Bake

A vibrant and wholesome dish that comes together in a flash!

Ingredients:

  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • ¼ cup brown sugar or maple syrup
  • 2 cups mixed berries (fresh or frozen)
  • 2 cups milk
  • 1 tsp vanilla essence
  • 1 large egg
  • 2 Tbsp melted butter
  • ¼ cup chopped mixed nuts or seeds for topping

How To Make Mixed Berry Breakfast Bake

  1. Preheat your oven to 190°C.
  2. Grease a baking dish or any ovenproof dish.
  3. In a large bowl, combine oats, baking powder, cinnamon, salt, and brown sugar.
  4. Gently fold in the mixed berries.
  5. If using frozen berries, no need to thaw.
  6. In a separate bowl, whisk together milk, vanilla, egg, and melted butter.
  7. Pour the wet ingredients into the dry ingredients and mix just until combined.
  8. Transfer the mixture to the prepared baking dish.
  9. Sprinkle nuts or seeds on top if using.
  10. Bake for 30–35 minutes, or until the top is golden and the centre is set.
  11. Let it rest for 5–10 minutes before serving.
