Mixed Berry Granola Crumble

A home-baked treat that brings instant comfort!

Ingredients:

For the Granola Crumble

  • 1¾ cups (210 g) Bokomo Nature’s Source Granola
  • ¾ cup (95 g) all-purpose flour
  • ⅓ cup (70 g) packed brown sugar
  • ½ tsp baking powder
  • ¼ tsp ground cinnamon
  • ¼ tsp fine salt
  • ½ cup (115 g) unsalted butter, cold and cubed
  • 1 tsp pure vanilla extract

For the Berry Filling

  • 2½ cups (about 350 g) mixed berries (fresh or thawed frozen; strawberries, raspberries, blueberries)
  • Zest of 1 lemon (about 2 tsp)
  • ½ cup (125 g) fruit-sweetened raspberry or strawberry jam
  • 1–2 tbsp lemon juice (to taste)

How To Make Mixed Berry Granola Crumble

  1. Preheat the oven to 180 °C (350 °F).
  2. Line an 8 × 8 in (20 × 20 cm) baking pan with parchment paper, leaving an overhang for easy lifting.
  3. In a large bowl, whisk together granola, flour, brown sugar, baking powder, cinnamon and salt. Add the cubed butter and vanilla.
  4. Using your fingertips or a pastry cutter, work the butter into the dry mix until it resembles coarse crumbs with some larger clusters.
  5. Reserve about 1½ cups of the crumble mixture for the topping.
  6. Press the remaining crumble firmly and evenly into the bottom of the prepared pan.
  7. Bake for 8–10 minutes, until the edges just start to turn golden.
  8. Remove from the oven.
  9. In a medium bowl, gently toss the berries with lemon zest, jam and lemon juice until evenly coated.
  10. Spread this mixture over the warm crust in an even layer.
  11. Sprinkle the reserved crumble mixture over the berry layer, pressing down very lightly so it sticks.
  12. Return to the oven and bake for another 20–25 minutes, until the top is golden and the filling is bubbling.
  13. Let the crumble cool completely in the pan on a wire rack (about 2 hours) to set.
  14. Once cooled, lift out using the parchment overhang.
  15. Slice into bars, or for a fun twist, use cookie cutters to cut into shapes.
  16. Alternatively, you can press and bake the mixture in muffin tins to create individual crumble cups.
