
Mixed Berry Granola Crumble
A home-baked treat that brings instant comfort!

Ingredients:
For the Granola Crumble
- 1¾ cups (210 g) Bokomo Nature’s Source Granola
- ¾ cup (95 g) all-purpose flour
- ⅓ cup (70 g) packed brown sugar
- ½ tsp baking powder
- ¼ tsp ground cinnamon
- ¼ tsp fine salt
- ½ cup (115 g) unsalted butter, cold and cubed
- 1 tsp pure vanilla extract
For the Berry Filling
- 2½ cups (about 350 g) mixed berries (fresh or thawed frozen; strawberries, raspberries, blueberries)
- Zest of 1 lemon (about 2 tsp)
- ½ cup (125 g) fruit-sweetened raspberry or strawberry jam
- 1–2 tbsp lemon juice (to taste)
How To Make Mixed Berry Granola Crumble
- Preheat the oven to 180 °C (350 °F).
- Line an 8 × 8 in (20 × 20 cm) baking pan with parchment paper, leaving an overhang for easy lifting.
- In a large bowl, whisk together granola, flour, brown sugar, baking powder, cinnamon and salt. Add the cubed butter and vanilla.
- Using your fingertips or a pastry cutter, work the butter into the dry mix until it resembles coarse crumbs with some larger clusters.
- Reserve about 1½ cups of the crumble mixture for the topping.
- Press the remaining crumble firmly and evenly into the bottom of the prepared pan.
- Bake for 8–10 minutes, until the edges just start to turn golden.
- Remove from the oven.
- In a medium bowl, gently toss the berries with lemon zest, jam and lemon juice until evenly coated.
- Spread this mixture over the warm crust in an even layer.
- Sprinkle the reserved crumble mixture over the berry layer, pressing down very lightly so it sticks.
- Return to the oven and bake for another 20–25 minutes, until the top is golden and the filling is bubbling.
- Let the crumble cool completely in the pan on a wire rack (about 2 hours) to set.
- Once cooled, lift out using the parchment overhang.
- Slice into bars, or for a fun twist, use cookie cutters to cut into shapes.
- Alternatively, you can press and bake the mixture in muffin tins to create individual crumble cups.
