Nulaid Crispy Chicken Honey Waffles with Honey Mustard Dressing
Crispy honey chicken Belgian waffles with honey mustard dressing are the best way to start any lazy brunch.

Ingredients:
For the waffles:
1 cup flour
1/3 cup sugar
2 tsp baking powder
1 large egg, separated
¾ cup milk
½ cup butter, melted
1 tsp vanilla essence
Chicken:
4 breasts, cut into strips
1/3 cup mayonnaise
1 tsp smoked paprika
1 tsp dried thyme
1 tsp garlic powder
1 ½ cup panko breadcrumbs
4 tbsp oil
Salt and pepper
½ cup butter, melted
¼ cup honey
¼ cup siracha
Honey mustard dressing:
1/3 cup olive oil
3 tbsp white wine vinegar
3 tbsp honey
3 tbsp Dijon mustard
Method:
Preheat the oven 200°C and the waffle iron. Prepare a baking sheet
In a bowl, combine flour, sugar and baking powder. In another bowl, lightly beat the egg yolk. Add the milk, butter and vanilla, mix well. Stir into dry ingredients just until combined. Beat egg whites until stiff then fold into the batter. Pour a ¼ cup of batter into the waffle iron and cook until golden brown on both sides. In a large bowl, combine the mayo, smoked paprika, dried thyme, garlic powder, salt and pepper. Add the chicken and toss to coat. Add the breadcrumbs to the bowl and stir gently until the panko crumbs coat the chicken. Transfer the chicken on to the baking sheet, pressing the extra breadcrumbs on the chicken as needed. Drizzle over the oil and bake in the oven for 15-20 minutes, flipping the chicken over halfway through the cooking process. Combine the melted butter, honey and siracha and drizzle over the cooked chicken. In a jar, mix together the dressing ingredients, season with salt and pepper and shake well. Serve the waffles topped with chicken and drizzle over the honey mustard dressing
Chefs Tip:
For crispy waffles ensure the waffle iron is heated to a high temperature before adding the better otherwise your waffles will turn our soggy and soft.
Making sure all the extra crumbs get onto the chicken strips results in a perfectly crispy baked chicken. The chicken strips could also be prepared in an air fryer following the same cooking instructions.
The honey mustard dressing can be stored in an airtight jar in the fridge and can be kept for up to 5 days.
