
Olive Pride Warm Brussel Sprout & Chickpea Salad
Warm salads are the perfect solution to grey days, when you need something that ticks the nourishing and comforting boxes. Our Olive Pride Brussel Sprout and Crispy chickpea salad will warm you up and keep you full as a meal on its own or as a side dish

Ingredients:
For the crispy chickpeas
1 tbsp Olive Pride blend
1 tbsp smoked paprika
1 tsp ground cumin
1 tsp garlic powder
1 tsp cayenne pepper
Salt and pepper to taste
For the brussel sprout salad
1 tbsp Olive Pride blend
1 shallot, chopped
300g (1 pack) Brussel spouts, shredded
2 cups Swiss Chard spinach, shredded
½ cup toasted walnuts, chopped
For the dressing
¼ cup Olive Pride EVOO
2 tsp Dijon mustard
Juice and zest of 1 lemon
1 tsp honey
¼ cup grated parmesan cheese
Salt and pepper to taste
Method:
Preheat the oven to 180C. Combine the ingredients for the chickpeas in a bowl and toss together. Place onto a lined baking sheet and bake in the oven for 15 minutes, until crispy.
Heat Olive Pride in a large pan and add in the shallot, shredded brussel sprouts, swiss chard and walnuts. Cook for 1-2 minutes until slightly softened, to keep the crunchy texture. Place into a serving dish with the chickpeas . Mix together the ingredients for the dressing pour over the salad and serve.
