One-Pan Mince & Veggie Skillet
A comforting, flavour-packed hash that takes whatever odds and ends you’ve got and turns them into a full-blown feast

Ingredients:
- 1 Tbsp oil
- 1 onion, chopped
- 2–3 cloves garlic, minced
- 500g mince
- 2–3 cups chopped veggies (carrots, bell peppers, zucchini, mushrooms, broccoli, etc.) or any vegetables you have
- 1 medium potato or sweet potato, diced small
- 1 tsp paprika or mixed herbs
- Salt and pepper to taste
- Splash of soy sauce or Worcestershire
- Fried eggs, shredded cheese, or hot sauce to top
How To Make One-Pan Mince & Veggie Skillet
- Heat oil in a large skillet over medium-high heat.
- Add the mince and break it up with a spoon.
- Cook until browned and most of the moisture has evaporated, about 6–8 minutes.
- Season with salt, pepper, and a pinch of herbs or paprika.
- Push the mince to the side of the pan and add the chopped onion and garlic.
- Cook until softened and fragrant, about 3 minutes.
- Stir in the diced potatoes and let them cook for 5–7 minutes, stirring occasionally, until they start to soften and crisp.
- Add the rest of the chopped vegetables.
- Cook for another 8–10 minutes, stirring occasionally, until everything is tender and slightly golden.
- Taste and adjust seasoning.
- Add a splash of soy sauce or Worcestershire for depth.
- Top with a fried egg, grated cheese, or whatever toppings you love. Serve hot!
