One-Pan Mince & Veggie Skillet

A comforting, flavour-packed hash that takes whatever odds and ends you’ve got and turns them into a full-blown feast

Ingredients:

  • 1 Tbsp oil
  • 1 onion, chopped
  • 2–3 cloves garlic, minced
  • 500g mince
  • 2–3 cups chopped veggies (carrots, bell peppers, zucchini, mushrooms, broccoli, etc.) or any vegetables you have
  • 1 medium potato or sweet potato, diced small
  • 1 tsp paprika or mixed herbs
  • Salt and pepper to taste
  • Splash of soy sauce or Worcestershire
  • Fried eggs, shredded cheese, or hot sauce to top

How To Make One-Pan Mince & Veggie Skillet

  1. Heat oil in a large skillet over medium-high heat.
  2. Add the mince and break it up with a spoon.
  3. Cook until browned and most of the moisture has evaporated, about 6–8 minutes.
  4. Season with salt, pepper, and a pinch of herbs or paprika.
  5. Push the mince to the side of the pan and add the chopped onion and garlic.
  6. Cook until softened and fragrant, about 3 minutes.
  7. Stir in the diced potatoes and let them cook for 5–7 minutes, stirring occasionally, until they start to soften and crisp.
  8. Add the rest of the chopped vegetables.
  9. Cook for another 8–10 minutes, stirring occasionally, until everything is tender and slightly golden.
  10. Taste and adjust seasoning.
  11. Add a splash of soy sauce or Worcestershire for depth.
  12. Top with a fried egg, grated cheese, or whatever toppings you love. Serve hot!
