One Pot Chicken Fajita Mac 'n Cheese

A comforting dish with creamy goodness thanks to Clover Fresh Milk!

Serves: 3-4

Ingredients:

  • 500g chicken breasts, cut into cubes
  • 1 tbsp smoked paprika
  • 2 tbsp fajita seasoning
  • 1 tbsp butter
  • 1 onion, chopped
  • 2 bell peppers, chopped
  • 2 cloves garlic, chopped
  • 300g pasta, cooked until almost al dente
  • 1 cup chicken stock
  • 2 cups Clover Fresh milk
  • 2 cups grated cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

How To Make Chicken Fajita Mac ‘n Cheese

  1. Season the chicken with smoked paprika and fajita seasoning then add a knob of butter to a large saucepan to brown the chicken
  2. Remove from pan and add in the onions, bell pepper and garlic. Sauté for a few minutes.
  3. Stir in the pasta, stock and Clover Fresh milk and cook until the pasta is cooked through.
  4. Add the chicken back in and season with salt and pepper. Cook for another few minutes.
  5. Stir through the cheese and garnish with chopped parsley
