  • 1 Onion, finely diced
  • 1 Red peppers, diced
  • 2 Carrot, peeled & diced
  • 2 Cups Vegetable stock
  • 2 tins KOO Pilchards in tomato sauce
  • 1 Cup Excella Rice
  • 1 Tin tomato chopped & peeled
  • 2 Garlic cloves, finely diced
  • 1 Tbsp Paprika
  • 1 Chilli, chopped (optional)
  • Mrs Balls Chutney, to serve
  • Parsley, finely chopped
  • Lemon wedges, to serve

How To Make One Pot Pilchards & Rice

  1. Add some oil to a large sauce pot, add the onion and allow to sauté for 3-4 minutes over a medium-high heat.
  2. Add the garlic, peppers, carrots, paprika and chilli, cook for another 3-4 minutes before adding the rice, tinned pilchards, tinned tomato and vegetable stock.
  3. Stir gently and cover with a lid and allow to simmer for 15-20 minutes until the rice has cooked through.
  4. Serve with some chopped parsley, chutney and a squeeze of lemon juice.
