Ingredients:
- 1 Onion, finely diced
- 1 Red peppers, diced
- 2 Carrot, peeled & diced
- 2 Cups Vegetable stock
- 2 tins KOO Pilchards in tomato sauce
- 1 Cup Excella Rice
- 1 Tin tomato chopped & peeled
- 2 Garlic cloves, finely diced
- 1 Tbsp Paprika
- 1 Chilli, chopped (optional)
- Mrs Balls Chutney, to serve
- Parsley, finely chopped
- Lemon wedges, to serve
How To Make One Pot Pilchards & Rice
- Add some oil to a large sauce pot, add the onion and allow to sauté for 3-4 minutes over a medium-high heat.
- Add the garlic, peppers, carrots, paprika and chilli, cook for another 3-4 minutes before adding the rice, tinned pilchards, tinned tomato and vegetable stock.
- Stir gently and cover with a lid and allow to simmer for 15-20 minutes until the rice has cooked through.
- Serve with some chopped parsley, chutney and a squeeze of lemon juice.
