Onion Bhajis with Clover Bliss Yoghurt Mint Sauce

Your favourite Indian streetfood snack at home!

Ingredients:

For the onion bhajis
2 onions, sliced
1 cup flour
1 tsp turmeric
1 tsp ground cumin
1 tsp garam masala
1 tsp chilli flakes
salt and pepper
oil for frying

For the mint sauce
1 cup Clover Bliss double cream yoghurt, plain flavour
Handful fresh coriander, chopped
½ cup mint leaves, chopped
1 green chilli, chopped
juice of ½ lemon
1 tsp ground cumin
Pinch of sugar
salt and pepper

Method:

To make the bhajis, mix together the flour and spices and add water to make a stiff batter. Stir the onions into the batter, to coat.

Heat the oil and add a spoonful of the onion mixture to the pan. Cook until the bhajis are golden brown and drain excess oil on paper towel.

To make the sauce, mix together the ingredients. You can also add them to a blender. Garnish with coriander and serve with bhajis

Chefs Tip: You can add a combination of onions to these onions bhajis like red onion and spring onion
