Otees-Crusted Ice Cream Sandwiches

A little crunch, a little cream, and a whole lot of indulgence!

 

Ingredients:

  • 2 cups Bokomo Otees (Original, Cream Soda or Bubblegum)
  • 1 cup all-purpose flour
  • ½ tsp baking soda
  • ½ cup unsalted butter, softened
  • ½ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup chocolate chips
  • 2 cups vanilla ice cream (or preferred flavour)

How To Make Otees-Crusted Ice Cream Sandwiches

  1. Make the Otees Chocolate Chip Cookies:
  2. Preheat oven to 180°C.
  3. Pulse 1 cup of Otees in a food processor until coarsely crushed. (Keep the remaining 1 cup whole.)
  4. In a bowl, cream together butter and brown sugar until light and fluffy. Mix in the egg and vanilla extract.
  5. Add flour, baking soda, and the crushed Otees, stirring until a dough forms.
  6. Fold in the chocolate chipsand reserved whole Otees for crunch.
  7. Scoop dough onto a baking tray and flatten slightly.
  8. Bake for 10-12 minutes or until golden brown.
  9. Let cool completely.
  10. Assemble the Ice Cream Sandwiches:
  11. Scoop ice cream onto one cookie and gently press another on top.
  12. Roll the exposed ice cream edges in whole Otees for extra crunch.
  13. Freeze for 30 minutes to set.
  14. Serve & Enjoy!
