
Otees-Crusted Ice Cream Sandwiches
A little crunch, a little cream, and a whole lot of indulgence!
Ingredients:
- 2 cups Bokomo Otees (Original, Cream Soda or Bubblegum)
- 1 cup all-purpose flour
- ½ tsp baking soda
- ½ cup unsalted butter, softened
- ½ cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- ½ cup chocolate chips
- 2 cups vanilla ice cream (or preferred flavour)
How To Make Otees-Crusted Ice Cream Sandwiches
- Make the Otees Chocolate Chip Cookies:
- Preheat oven to 180°C.
- Pulse 1 cup of Otees in a food processor until coarsely crushed. (Keep the remaining 1 cup whole.)
- In a bowl, cream together butter and brown sugar until light and fluffy. Mix in the egg and vanilla extract.
- Add flour, baking soda, and the crushed Otees, stirring until a dough forms.
- Fold in the chocolate chipsand reserved whole Otees for crunch.
- Scoop dough onto a baking tray and flatten slightly.
- Bake for 10-12 minutes or until golden brown.
- Let cool completely.
- Assemble the Ice Cream Sandwiches:
- Scoop ice cream onto one cookie and gently press another on top.
- Roll the exposed ice cream edges in whole Otees for extra crunch.
- Freeze for 30 minutes to set.
