Coconut date balls

Need a quick, healthy and naturally sweet snack? Then these coconut dates are the perfect no-bake treat!

Preparation time: 15 minutes, plus 30 minutes to set

Ingredients:

  • 1 cup pitted dates
  • ½ cup desicatted coconut
  • ¼ almonds or walnuts
  • 1 Tbsp coconut oil
  • 1 tsp vanilla essence

How To Make Coconut date balls

  1. In a food processor blitz together the dates until they form a sticky paste, then add in the coconut and nuts and blitz until well combined.
  2. Then fold in the vanilla essence and coconut oil.
  3. Roll the mixture into small balls, then roll into the dessicated coconut to coat.
  4. Place the balls in the fridge for about 30 minutes to set.

Chefs Tip: If your dates are too dry or firm, then soak them in warm water for 10 minutes to soften before blending. You can also roll the dates balls in cocoa powder or crushed nuts.
