Pad Kra Pao Gai

One bite of Pad Kra Pao and suddenly life feels a little more exciting.

Ingredients:

  • 1 chicken breast (200g)
  • 5 cloves of garlic
  • 4 – 10 Thai chilies
  • 1 tablespoon oil for frying
  • 1 teaspoon of oyster sauce
  • 1/2 teaspoon light soy sauce
  • 1 splash of dark sweet soy sauce
  • 1/2 teaspoon sugar
  • 1 handful of basil leaves
  • 1 egg
  • 2 tablespoons of oil for frying
  • Rice to serve with

How To Make Pad Kra Pao Gai

  1. Cut the chicken into bite sized pieces.
  2. Peel the garlic and chilies and crush them.
  3. Heat oil in a pan, then add the chilies and garlic. Stir fry for about 20 seconds.
  4. Add in the chicken and keep stir frying continuously until it is cooked all the way through.
  5. Add the oyster sauce, light soy sauce, sugar and dark soy sauce. Keep stir frying for 30 seconds.
  6. Toss the basil into the pan, fold it into the chicken and immediately turn off the heat.
  7. Heat oil in a pan and trop the egg. Let it sizzle and bubble up and splash hot oil on top of it.
  8. Combine the egg with the rice and spicy chicken
