Pad Kra Pao Gai
One bite of Pad Kra Pao and suddenly life feels a little more exciting.

Ingredients:
- 1 chicken breast (200g)
- 5 cloves of garlic
- 4 – 10 Thai chilies
- 1 tablespoon oil for frying
- 1 teaspoon of oyster sauce
- 1/2 teaspoon light soy sauce
- 1 splash of dark sweet soy sauce
- 1/2 teaspoon sugar
- 1 handful of basil leaves
- 1 egg
- 2 tablespoons of oil for frying
- Rice to serve with
How To Make Pad Kra Pao Gai
- Cut the chicken into bite sized pieces.
- Peel the garlic and chilies and crush them.
- Heat oil in a pan, then add the chilies and garlic. Stir fry for about 20 seconds.
- Add in the chicken and keep stir frying continuously until it is cooked all the way through.
- Add the oyster sauce, light soy sauce, sugar and dark soy sauce. Keep stir frying for 30 seconds.
- Toss the basil into the pan, fold it into the chicken and immediately turn off the heat.
- Heat oil in a pan and trop the egg. Let it sizzle and bubble up and splash hot oil on top of it.
- Combine the egg with the rice and spicy chicken
