Peach Galette

Celebrating the Pantone Colour of the Year – Peach Fuzz – with this gorgeous Peach Galette

Serves: 4-8
Time:  40 minutes


  • 1 sheet puff pastry
  • 3 peaches
  • 1/3 cup treacle sugar
  • 3 tbsp butter, melted
  • 1 tsp vanilla essence
  • 1 egg, beaten
  • ½ cup flaked almonds
  • 2 tbsp apricot jam
  • To serve:
  • Icing sugar, for dusting
  • Vanilla essence

How To Make Peach Galette

  1. Wash and slice your peaches into eighths.
  2. Mix them with 2/3 sugar, melted butter and vanilla and set aside.
  3. Lightly roll your puff pastry on a floured surface, add the peaches to the centre and arrange them in circular pattern.
  4. Leave 2cm edge around the filling.
  5. Fold the edges over and pinch.
  6. Brush the egg wash on the edges, sprinkle the remaining sugar and flaked almonds on the crust.
  7. Bake in the oven for 25-30 minutes or until the peaches are bubbling and crust is golden brown.
  8. Brush the apricot jam over the galette and allow to cool before serving.
  9. Serve with ice cream.
