Pickled Fish Air Fryer Falafel
Leftover pickled fish? Transform it into little snacks with this recipe!

Ingredients:
- 1 can chickpeas, drained
- 2 fillets pickled fish with sauce, separated
- 1 small red onion, roughly chopped
- 3 garlic cloves
- 1/3 cup fresh parsley
- 1/3 cup fresh coriander
- 2 tsp ground cumin
- 1 tsp ground coriander
- 2 tbsp flour
- 1 tsp baking powder
- 1 tsp salt
- 1 tsp cracked black pepper
- Cooking spray
How To Make Pickled Fish Falafel
- Place the chickpeas, fish fillets, onion and garlic in a food processor and blend until smooth.
- Add the fresh herbs, spices, flour, baking powder and seasoning. Blend again until smooth and combined
- Spoon a tablespoon size portion of the mixture into your hands and roll to form a ball. Repeat until all the mixture is used.
- Place the balls in the fridge for 30 minutes to firm up
- Lightly coat each falafel with cooking spray and arrange in the air fryer.
- Cook at 180C for 12-13 minutes, flipping them halfway through cooking for even browning.
- Serve with the pickled fish sauce and garnish with fresh herbs.
