Pizza Baked Potatoes
A budget-friendly meal for that time of the month.

4 Large potatoes, boiled
1 Cup cheddar cheese, grated
½ Cup pizza / pasta tomato based sauce
¼ chopped chorizo or pepperoni, cooked
1 tsp dried oregano
salt and pepper, taste
basil to garnish (optional)
Preheat the oven to 180°C and line a baking sheet with baking paper.
Cut the potatoes in half length ways and scoop out the filling of the potatoes into a mixing bowl. Set aside half of the mixture and the to the remaining half fold in the tomato based sauce, dried oregano and season with salt and pepper.
Place the potato shells onto the baking sheet and then scoop the filling back into the potatoes, top with chopped chorizo or pepperoni and cheese.
Place the potatoes into the oven to bake for 15-20 minutes or until the cheese has melted and turned a golden brown colour.
Serve the pizza potatoes hot and top with some fresh basil.
Chefs Tip: You can prebake the potatoes until soft instead of boiling them. Use the leftover potato filling to turn into mash for another meal.
